VEGAN CAWL

This is a recipe inspired by Cerys Matthews' Happy Foodie recipe. It is a slight twist on her recipe...


Ingredients

2 Onions (finely chopped)

3 Cloves of garlic (minced)

3 Leeks (finely chopped)

3 Carrots (diced)

3 Potatoes (diced)

Handful of puy lentils

Sprig of thyme

1 tbsp Vegan bouillon

1/2 tsp Pepper

Salt (to taste)


Method

  1. Sautee onions, leek and garlic to start.

  2. When softened, add carrots and potatoes. Satuee for a few minutes then pour over water so just covering the veggies. Add stock.

  3. Add 1-2 handful of lentils, depending on how pulse-y you'd like it.

  4. Simmer for about 20-25 minutes unti lentils are thoroughly cooked.

  5. Enjoy with a hunk of bread!
