Setondji's Saag ‘sweet’ Aloo
Ingredients (serves 20)
3 kg White sweet potato
4 kg Standard sweet potato
1kg g red onions
1kg cherry tomato
1.5kg Kale
2Tbsp Fennel seed
3Tbsp Coriander seed
2Tbsp Smoked Paprika
4Tbsp Cumin Coriander
3 Tbsp of Raja ‘Ginger kicker’
3Tbsp coconut oil
Method
Wash the sweet potatoes and chop to one-inch quarters. Bring it to boil with
levelled water and salt, for 6min., simmer for 4min with a lid. Save the water to
Pour washed and chopped Kale to start softening the stoke and leaf.
Slice onions and dry fry on high hit until slightly black coloured. Add cooking oil
fennel seeds and crushed coriander seeds for a minute.
Add Halfed cherry Tomatoes and Spices, stir fry for 6-7 min high heat .
Add Blanched Kale
Finish with Sweet Potatoes and Coconut oil
