ISABEL'S VEGAN APPLE CAKE
One of our volunteers, Isabel, shared this apple cake recipe at our Christmas feast.
She learned it from her vegan housemate and adapted it by mixing in apples to make it extra appley.
Dry ingredients:
200g self-raising flour
100g brown sugar
1 tsp baking powder
1tsp cinnamon powder
Wet ingredients:
150ml dairy-free milk
75ml sunflower oil
1 ½ tsp vanilla essence
1 tbsp apple cider vinegar
Other ingredients:
2 apples
Vegan butter to grease the baking tin
Icing sugar
Method
Preheat oven to 180C. Line a baking tin with baking paper and grease the sides with vegan butter. In a large bowl mix together all the dry ingredients.
Then combine all the wet ingredients in a jug, stir and mix with a spoon.
Using a whisk/spoon pour the wet ingredients into the dry ingredients and mix together well until you get a smooth batter.
Pour the batter into the cake tin and spread evenly.
Peel two apples, remove the seeds and cut each into slices. Place the apple slices on the batter. Bake the cake in the preheated over for 35-45 minutes.
Let it cool down and then sprinkle some icing sugar on top. Enjoy!
