SWEET POTATO STEMS
At the garden, we are growing purple sweet potato in the polytunnel. The main reason to grow sweet potato is for the tubers - or at least that is what we at Global Gardens thought.
During the Food Geographies Planning Change in the City: food futures workshop at the garden, one of the participants Xin (PhD student, UCL) shared with us that the sweet potato plant offers other delicacies. Xin is from the southern part of Jiangsu province(江苏省)province near Shanghai, China. Here, the sweet potato stem is considered a delicacy. Xin recalls harvesting and cooking the stems with her grandma. Xin has kindly shared her family recipe below ...
Recipe:
Peel the skin off the sweet potato stem.
Heat a tablespoon of sunflower oil in a pan and heat.
Add the stems.
Add salt to tast.
Stir to cool for a few minutes.
Enjoy!
